How are Batch and Continuous Mixing Different?
Batch mixing involves loading ingredients for each batch separately, mixing the dough, and discharging it from the mixer before introducing another batch. The time in between batches often causes inconsistencies due to processing variations and control mechanisms.
In Continuous Mixing, ingredients are continuously metered directly into the mixing chamber and generate a constant stream of mixed dough at the exit of the mixer. The result is even dough hydration, better integration of minor ingredients, and none of the dough variables caused by batch mixing. A continuous mixer can be operated with less labor and energy than batch mixing, and one mixer can handle multiple lines.
