What is Continuous Mixing?
Industrial mixing involves four primary operations:
- Delivering bulk ingredients (typically flour) to the mixing area;
- Measuring ingredients placed in the mixer;
- Mixing the ingredients into a dough;
- Handling the dough as it exits the mixer.
In a batch mixing process, these four operations are often treated, designed and implemented separately. Continuous Mixing, on the other hand, integrates all four operations into a single, streamlined process.
Bulk delivery, metering, mixing and dough handling become a consistent, uninterrupted process. Metering systems are accurate and designed for accuracies of ±0.25% or better. Products with very low to very high dough moisture levels are uniformly mixed without generating excessive heat. Dough is discharged from the mixer in a constant stream instead of in one large batch every 10 to 15 minutes.

Baked Goods, Fillings & Icings: The MX Continuous Mixer is our most versatile mixer and is suitable for a wide range of products including cookies, snacks, pizza, pretzels, muffins, cake-style donuts, icings, batters, peanut butter, pie fillings, and other fat/sugar mixtures. Solid ingredients are quickly blended into solid fat to form a uniform mixture without creating excessive heat.
Buns, Breads & Rolls: Exact Mixing offers the HDX Continuous Mixer which is designed specifically for mixing ultra-high absorption, highly developed dough, such as for breads, hamburger and hot dog buns, hard rolls, English muffins, tortillas, multi-grain products, and similar products.
Cookies & Other 2-Stage Products: The LDX Continuous Mixer is well-suited for most types of cookies and other applications where ingredients are blended before flour is added. All ingredients except flour are combined in the crème-up stage, and special mixing elements cut the fat into the other ingredients. The flour is added before the development stage where the final dough is created.
Crisp Products: The Exact FX Continuous Mixer is designed specifically for products where critical moisture levels determine final product texture, such as baked potato chips, stackable potato chips, rice crisps, corn chips, veggie chips, potato snack, multigrain chips, and more.
Wheat-Based Bakery Products: Specifically designed for mixing low- to mid-absorption, fully developed doughs, our EX Continuous Mixer is well-suited for crackers, pretzels, bagels, pizza, cookies, pie crusts, pocket sandwiches, pastries, pet treats and more.
