Continuous Mixing Technology
Industrial mixing consists of four primary operations:
- Delivering bulk ingredients (typically flour) to the mixing area
- Measuring ingredients placed in the mixer
- Mixing the ingredients into a dough
- Handling the dough as it exits the mixer.
In a batch mixing process, these four operations are often treated, designed and implemented separately. The bulk delivery system measures the flour. Measuring other ingredients is often done by employees or systems designed to deliver ingredients quickly but not necessarily accurately. Mixing is somewhat inflexible, typically allowing only for time and speed adjustments. When the dough exits the mixer in a large batch, it requires extra time to process.
Continuous Mixing, in contrast, integrates all four operations into a single process. Bulk delivery, metering, mixing and dough handling become a cohesive, uninterrupted process. Metering systems are accurate and designed for accuracies of ±0.25% or better. Products with dough moisture levels that range from very low to very high are uniformly mixed without generating excessive heat. Dough is discharged from the mixer in a constant stream rather than in one large batch every 10 to 15 minutes.
Hydrobond Technology
The Exact Mixing Hydrobond Technology brings liquids and a dry ingredient stream (typically flour) together quickly, with little temperature gain. It can be used with a continuous mixer to make the mixing process more efficient or with a pre-hydration system to mix flour, minors and water directly into a brew holding tank. This system speeds up the continuous process, allowing for the use of a shorter mixer, which means a smaller footprint, lower equipment costs, and lower energy costs.
