Batch Mixing or Continuous Mixing?
Batch mixing is a process in which the ingredients for one batch are loaded (either at once or in a pre-defined sequence), mixed, and discharged from the mixer before another batch is introduced.
Continuous Mixing is the process of continuously metering ingredients directly into the mixing chamber and generating a continuous stream of mixed product at the exit of the mixer. The mixing may be done in stages to ensure all ingredients are properly incorporated.
Many batch mixing systems can be automated to some degree, but Continuous Mixing Systems are automated by nature. They also provide a consistent, steady supply of dough; eliminate dough variables caused by batch mixing; offer high production rates with a single mixer; make changeovers quick and easy; and can be operated with less labor and energy than batch mixing.
Continuous Mixing for Bread Production Lines
Exact Mixing has developed the HDX Continuous Mixer specifically for mixing ultra-high absorption, highly developed dough, such as for breads, hamburger and hot dog buns, hard rolls, English muffins, tortillas, multi-grain products, and similar products.
This High Development Continuous Mixer is designed to manufacture highly developed dough at low temperatures. A two-stage system, the HDX Mixer mixes all ingredients into a uniform mass with a twin-screw mixer in the first stage. In the second section, the dough is kneaded to the proper development level with a single screw mixer.
The HDX Mixer provides precise and uninterrupted ingredient metering to the mixer and eliminates the chance of contamination because the dough is never exposed to the environment. This mixer offers dough production rates from 1,500 to 10,000 kg/hour.
