The Continuous Mixing Process
In the Continuous Mixing process, bulk delivery, metering, mixing and dough handling become a consistent, uninterrupted process. Metering systems are accurate and designed for accuracies of ±0.25% or better, and products with very low to very high dough moisture levels are uniformly mixed without generating excessive heat.
Dry Materials Handling: There are several ways that dry ingredients can be introduced to the system. The most common methods include ingredients from a silo, a bulk bag or a dumping station for smaller containers. Ingredient additions can be completely automated, manual, or somewhere in between.
Materials Blending: Dry minor ingredients are often blended in advance to improve consistency, add system flexibility and reduce costs. Flour may or may not pass through the blender depending upon the usage rate. Micro ingredients are sometimes added directly to the blender to ensure their proper distribution.
Liquid Materials Handling: Small tanks near the mixer serve as the liquid supply to the metering system. Refill of these tanks is automatic. These tanks are included in the system to optimize the liquid metering system.
Dry Materials Metering: Exact Mixing Systems are designed with gravimetric, Loss-in-Weight technology, which provides precise, uninterrupted dry ingredient metering to the Mixer. The Loss-In-Weight feeder receives a set point from the system recipe control. The actual process value is returned to the system recipe control from the Loss-In-Weight feeder. The two values (set point and actual value) are constantly compared and recorded. Most often the two values are the same, but if there is a difference, the system alarms the operator to investigate.
Liquid Metering: Liquid ingredients are metered with the use of metering pumps, flow meters and closed loop controls. Like with Dry Metering, the two values (set point and actual value) are constantly compared and recorded. Depending on the ingredient needs, the liquid systems can be jacketed for heating or cooling.
Continuous Mixing: The Exact Mixing HDX or High Development Continuous Mixer is designed specifically to manufacture highly developed dough at low temperatures and is a great choice for ultra-high absorption doughs, such as buns, breads, rolls, English muffins and similar products. The HDX mixer offers dough production rates from 1,500 to 10,000 kg/hour.
