Why Continuous Mixing?
Continuous Mixing combines all mixing operations – bulk delivery, metering, mixing, dough handling – into one continuous process. Metering systems produce accuracies of at least ±0.25%. Products with a wide range of dough moisture levels can be uniformly mixed without generating excessive heat. The dough is discharged from the mixer in a constant stream instead of in one large batch from a batch mixer every 10 to 15 minutes.
Although Continuous Mixing involves a more expensive initial investment, many long-term advantages exist. Continuous Mixing provides exceptional scaling accuracy for dry and liquid ingredients due to the high-tech metering systems.
Bakers also enjoy better, more consistent quality without dough variations. Exact mixers are also self-monitoring and self-correcting, so once the process runs, it can continue without cleaning the bowl or doing other work in between.
