Dough mixing is an essential step in industrial baking processes. Learn more about the importance of mixing technology and the wide range of Continuous Mixers available from Exact Mixing.
Exact Mixing, founded in Memphis, Tennessee in 1994, became a Reading Bakery Systems brand in 2008 and continues to deliver innovative mixing solutions to customers and industries around the world. Our equipment is engineered and manufactured at the main Reading Bakery Systems facility in Robesonia, Pennsylvania.
Hydrobond Technology
Exact Mixing Hydrobond Technology brings liquids and a dry ingredient stream (typically flour) together quickly before it enters a continuous mixer, without adding heat to the dough.
It mixes dough on a particle-to-particle basis, based on the principle that mixing smaller amounts of liquid and dry ingredients together at one time is more efficient and results in more uniformly hydrated dough. It can be used with a pre-hydration system to mix flour, minors and water directly into a brew holding tank, and may also be retrofitted to existing systems.
When used with an Exact Continuous Mixer, Hydrobond Technology makes the mixing process more efficient and allows for the use of a shorter mixer. This results in a smaller footprint, lower equipment costs, and lower energy costs.
Metering Systems
Exact Mixing also designs and supplies metering systems for nearly every Continuous Mixer we supply. Mixers are designed using Loss-in-Weight technology – the most accurate feeding technology available. And all metering and mixing procedures are monitored and initiated by the control system, so operators can always confirm and modify as needed.
Our comprehensive line of mixer models and sizes offer production volumes that range from 50 kg/hour to over 10,000 kg/hour and will successfully mix a wide variety of food products. They include:
Exact EX Continuous Mixer – designed for wheat-based snack products, such as crackers and sweet goods, and other low- to mid-absorption stiff doughs.
Exact HDX Continuous Mixer – a two-stage system designed for manufacturing ultra-high absorption, highly developed doughs at low temperatures, such as for buns, bread, rolls, English muffins, and similar products.
Exact FX Continuous Mixer – designed for products where critical moisture levels determine final product texture, such as baked potato chips and crisp products.
Exact MX Continuous Mixer – our most versatile mixer is designed for products that require high energy mixing, including cookies, snacks, batters, icings, pretzels, pizza, and pastes.
Exact LDX Continuous Mixer – ideal for cookies and other applications where ingredients are blended before adding flour.
What Does a Continuous Mixing System Cost?
Continuous Mixing systems are almost always higher in cost initially than batch mixers. This is because the raw materials that enter the mixer have to be metered, which requires ingredient feeders. On the other hand, cost of operation and ownership is almost always less expensive with Continuous Mixing. Payback opportunities come from increased yield, increased throughput, increased consistency, reduced manpower, reduced downstream handling equipment, and reduced energy.
