Compared to batch mixers, Continuous Mixers from Exact Mixing promote even dough hydration. Discover the difference our rapid hydration mixing systems can make in consistency, waste reduction, and better product yields.
Advantages of Continuous Mixing Over Batch Mixing
In the batch mixing process, one batch’s ingredients are loaded, mixed, and discharged from the mixer before another batch is introduced. The time between batches often causes inconsistencies due to controlling mechanisms and processing variations.
Continuous Mixing, in comparison, continuously meters ingredients into the mixing chamber and generates a continuous stream of mixed product when exiting the mixer. The results include even dough hydration, better integration of minor ingredients, and elimination of dough variables. One Continuous Mixer can feed multiple lines and operate with less labor and energy than batch mixing.
When joined with a Continuous Mixer, Exact Mixing Hydrobond Technology quickly brings liquids and a stream of dry ingredients (usually flour) together before entering the mixer, without adding heat to the dough.
The dough is mixed on a particle-to-particle basis, based on the principle that mixing smaller amounts of liquid and dry ingredients simultaneously results in a more uniformly hydrated dough, a shorter mixing time, and is more efficient. Use Hydrobond technology with a pre-hydration system to mix flour, minors, and water directly into a brew holding tank.
Continuous Mixer Models
We offer a range of mixer models for different types of products. Production volumes range from 50 kg/hour to over 10,000 kg/hour. Mixing can be accomplished in an almost employee-free environment, increasing cost savings.
Exact EX Continuous Mixer – We designed this mixer for wheat-based snack products, such as crackers, sweet goods, and other low- to mid-absorption stiff doughs.
Exact HDX Continuous Mixer – We designed this two-stage system for creating ultra-high absorption, highly developed doughs at low temperatures, such as for bread, rolls, buns, English muffins, and similar products.
Exact FX Continuous Mixer – We designed this mixer for products where critical moisture levels control final product texture, including baked potato chips and crisp products.
Exact MX Continuous Mixer – We designed our most versatile mixer for products that require high-energy mixing, including cookies, snacks, batters, icings, pretzels, pizza, and pastes.
Exact LDX Continuous Mixer –We designed this mixer for cookies and other applications where ingredients are blended before adding flour.
