Advantages of Continuous Mixing Over Batch Mixing
In the batch mixing process, one batch’s ingredients are loaded, mixed, and discharged from the mixer before another batch is introduced. The time between batches often causes inconsistencies due to controlling mechanisms and processing variations.
Continuous Mixing, in comparison, continuously meters ingredients into the mixing chamber and generates a continuous stream of mixed product when exiting the mixer. The results include even dough hydration, better integration of minor ingredients, and elimination of dough variables. One Continuous Mixer can feed multiple lines and operate with less labor and energy than batch mixing.
Hydrobond Technology
When joined with a Continuous Mixer, Exact Mixing Hydrobond Technology quickly brings liquids and a stream of dry ingredients (usually flour) together before entering the mixer, without adding heat to the dough.
The dough is mixed on a particle-to-particle basis, based on the principle that mixing smaller amounts of liquid and dry ingredients simultaneously results in a more uniformly hydrated dough, a shorter mixing time, and is more efficient. Use Hydrobond technology with a pre-hydration system to mix flour, minors, and water directly into a brew holding tank.
