Dough for baked goods that absorb high moisture levels requires the mixing capability of the HDX Continuous Mixer. This mixer is highly effective at processing super-high absorption dough used to create products such as buns, rolls, and loaves of bread at production rates ranging from 1,500 kg to more than 10,000 kg an hour.
Exact Mixing engineers designed the LDX Continuous Mixer to blend all dry ingredients before adding flour right before the development stage. Every dry ingredient mixes together during the creme-up stage, and then mixing elements cut fat into the dry ingredients. Production rates reach as high as 9,000 kg per hour.
Not every process requires the production of high-absorption dough. The EX Continuous Mixer specializes in processing low-absorption dough for thin wheat-based snacks. Because of the thin shape of the snacks, this continuous mixer gently kneads the dough before it reaches the development stage.
As a high-intensity mixer, the FX continuous mixer from Exact Mixing adds moisture to hydroscopic powders to transform the powders into fabricated corn and potato chips. The machine operates at a low energy level to ensure consistency during the entire dough-blending process.
