In 1994, Exact Mixing unveiled an alternative method for mixing dough. Our proprietary continuous mixers transformed the way industrial bakeries in Malaysia and throughout the world process dough for baked goods that range in size and texture from miniature pastries to large loaves of bread.
What is Continuous Mixing?
Continuous mixing involves the uninterrupted dispensing of ingredients directly into the mixing chamber, leading to a continuous flow of dough exiting the mixer. To guarantee proper incorporation of all ingredients, the mixing process may occur in stages. This method yields a consistent product day in and day out. Automating the dough mixing process increases product throughput, while decreasing operating costs.
Continuous Mixing offers other advantages, including:
- Consistent dough quality with no undesirable variations from batch-to-batch
- Precise delivery of raw materials to the mixer
- Space-saving equipment
- Cost-effective production rates of 2,000 or more pounds/hour
- Continuous dough production that can be sliced into loaves automatically by the mixer, without additional equipment
- Improved food safety as the dough is never exposed to the environment
- Automated operation that reduces labor costs.
The Vice President of Exact Mixing, Jim Warren, discusses the main differences between the continuous and batch mixing process. “Batch mixing is like walking up a flight of stairs, and continuous mixing is like taking the escalator. Both get you to the same final destination but with batch mixing, you have to go one step at a time and put in more effort; with continuous mixing, it’s just a steady-flowing process. Continuous mixing offers a consistent, uniform dough stream to a production line at the same rate that it is used. It provides consistent dispersion of ingredients, simpler dough feed equipment, and tighter control over the entire mixing process.”
What Are the 5 Types of Continuous Mixer Models?
Exact Mixing offers your industrial bakery five distinct continuous mixer models that can help you expand your production rates.
MX Continuous Mixer: The MX Continuous Mixer is our most versatile mixer suitable for a wide range of products, including pizza, cookies, snacks, batters, icings, and pastes.
HDX Continuous Mixer: The HDX, or High Development, Continuous Mixer is well-suited to buns, bread, rolls, English muffins, tortillas, and other ultra-high-absorption products.
EX Continuous Mixer: The EX Continuous Mixer uniformly mixes products with various dough moisture levels and is ideal for gentle kneading of low-absorption doughs for cookies, crackers, pretzels, and bagels, as well as high-absorption doughs for bread, buns, and pizza.
FX Continuous Mixer: For hydroscopic powders and other low moisture mixtures, consider the FX Continuous Mixer. The high-intensity mixer can be used for potato-, corn- and rice-based products and specialty baked snacks, such as fabricated potato chips.
LDX Continuous Mixer: If your product line includes cookies or other products that involve a two-stage mixing process, the LDX Continuous Mixer is the perfect solution.
