Mixing & Kneading Dough
Exact Mixing manufactures the HDX Continuous Mixer specifically for ultra-high absorption, highly developed dough at low temperatures, such as for bread, buns, rolls, English muffins, tortillas, and multi-grain products.
This Continuous Mixer is a two-stage system. All ingredients are first mixed into a uniform mass with a twin-screw mixer. Then, the dough is kneaded to the proper development level with a single-screw mixer in a separate section.
The Exact HDX Mixer offers dough production rates from 1,500 to 10,000 kg/hour. It provides precise and uninterrupted ingredient metering to the mixer and eliminates the chance of contamination because the dough is never exposed to the environment.
We encourage you to explore whether your process is a good fit for Continuous Mixing with our Continuous Mixing Calculator.
What Does an Exact Continuous Mixing System Include?
A complete Exact Mixing Continuous Mixing System includes the mixer, blender, materials handling equipment, ingredient metering equipment, and a control system that monitors and distributes product between them. We provide complete systems, testing, and installation supervision for both straight dough and liquid ferment systems.
What is the Cost of a Continuous Mixing System?
Continuous Mixing systems are typically higher in cost initially than batch mixers because the raw materials that enter the Continuous Mixer have to be metered, requiring ingredient feeders. However, the cost of operation and ownership is almost always less expensive with Continuous Mixing.
Payback opportunities come from greater yield, greater throughput, better consistency, less manpower, reduced downstream handling equipment, and lower energy.
We Provide Mixer Demonstrations
If you would like to see your products mixed in a continuous process, we urge you to visit the Reading Bakery Systems Science & Innovation Center in Sinking Spring, Pennsylvania.
The Center features a dedicated Continuous Mixing area with all Exact Mixer models, including the HDX Mixer (high development), EX Mixer (single-screw), MX Mixer (twin-screw), and FX Mixer (high shear).
Customers can also explore our automated bulk handling system, a horizontal dry blender, gravimetric dry feeders, and mass flow liquid systems.
