Continuous Mixing for Bread & Rolls
The Exact Mixing HDX Continuous Mixer was specifically designed to manufacture ultra-high absorption, highly developed dough at low temperatures, such as for breads, rolls, buns, English muffins, tortillas, and many multigrain products.
This High Development Continuous Mixer is a two-stage system that mixes all ingredients into a uniform mass in the first stage with a twin-screw mixer, and then, in the second stage, kneads the dough to the proper development level with a single-screw mixer.
The Exact HDX Mixer provides precise and uninterrupted ingredient metering to the mixer and eliminates the chance of contamination because the dough is never exposed to the environment.
This mixer offers dough production rates up to 10,000 kg/hour. Of course, mixer production rates are dependent on the amount of moisture in your formulation, the level of development required, temperature, and other factors.
The HDX Mixer’s standard features and specifications include 304 stainless steel construction, liquid jacketed and insulated mixer barrels with inlet and outlet connections, and a pneumatic cutter used at the exit of the mixer to cut dough into manageable chunks. Exact Mixing also offers automated dough handling systems to transport dough to downstream equipment.
Is a Continuous Mixing System Expensive?
Continuous Mixing Systems are almost always initially higher in cost than batch mixers. This is primarily because the Continuous Mixer requires an ingredient feeder in order to meter raw materials entering the mixer.
