For highly technical processes that involve machine learning (ML) and artificial intelligence (AI), businesses rely on automation to optimize the benefits of processing more information in less time. The same productivity benefit of automation also helps commercial and industrial bakeries maximize the volume of dough processed while at the same time lowering operating costs. Bakeries that produce dough products using batch mixers do not enjoy the many benefits delivered by automation.
In 1994, Exact Mixing introduced a groundbreaking dough mixing method to compete with batch mixers. Our line of automatic continuous bakery mixers meets the production needs for dough recipes that form almost every type of baked good. From high-density artisan bread to hydroscopic powders such as potato flakes, the Exact Mixing line of continuous mixers operates an automated system that substantially increases your commercial or industrial bakery’s profit margin.
Why Does Automation Matter for Commercial Bakery Mixers?
The automation technology incorporated into the Exact Mixing line of continuous mixers measures ingredients, transports the ingredients for dough recipes to each mixer, and ensures every batch of dough complies with the strictest food safety standards. The accurate measurement of ingredients for each batch of dough helps your commercial or industrial bakery eliminate costly food waste. Another cost-saving benefit provided by Exact Mixing continuous mixers concerns labor costs. By automating our dough processing systems, we help your commercial or industrial bakery reduce the cost of labor.
Exact Mixing Continuous Mixer Models
Exact Mixing engineers designed each of our five continuous mixer models to produce the dough that forms specific baked goods.
As a high-intensity mixer, the FX model produces the dough to form corn, rice, and potato-based baked goods. This model is perfect for mixing hydroscopic powders that eventually become fabricated potato chips and other low-moisture mixtures at production rates between 100 and 1,250 kg an hour.
The most versatile mixer in our lineup meets the production needs for the dough used to form baked goods such as snacks, cookies, pretzels, and even cake batters. You can ramp up the production rate for the MX Continuous Mixer as high as 8,000 kg per hour.
The EX Continuous Mixer is the right blending choice for stiff, low-absorption, wheat-based dough except for the lowest-viscosity powders. Production rates for this continuous mixer can exceed 7,500 kg an hour.
This mixer is an excellent choice for most types of cookies and other goods with ingredients that are blended before the flour is added. Production rates for the LDX model can reach 9,000 kg per hour.
With a production rate ranging from 1,500 kg to more than 10,000 kg an hour, the HDX Continuous Mixer produces the dough to form popular baked goods like buns, rolls, bread, and English muffins.

Exact Mixing designs and manufactures customized ingredient measuring systems for each of our continuous mixer models. We incorporate proprietary Loss-in Weight Technology into each continuous mixer to provide your commercial or industrial bakery with the most accurate ingredient measuring and feeding system. To ensure the most precise measuring of the ingredients used to produce dough products, a team of our engineers helps you test and install the right dough-mixing system for your bakery.
